OPC is the scientific name of an antioxidant complex derived from various plants especially grape seeds and pine bark (Pycnogenol). OPC stands for aligomeric proanthocyanidin, a class of extremely potent antioxidant compounds. Many experts believe that the OPSs in red wine explain the French paradox that is, that the French enjoy relatively low rates of heart disease despite a diet high in saturated fat. OPCs are believed to help prevent the oxidation of blood fats and cholesterol upon which much arterial heart disease is blamed.
